Featured Recipe Classic Macaroni and Cheese…So Delicious I love homemade Macaroni and Cheese. Although I don’t eat it all the time, it’s a once-a-month treat in my house…especially on  cold winter nights. I think this recipe is delicious…and I hope you and your family enjoy it as well. It makes a large portion, but you can always cut the recipe in half if you wish.  Ingredients (Serves 12) 1 (16 oz) box of elbow macaroni, cooked al dente (don’t make too mushy) according to package directions 10 Tbsp (1 stick + 2 TB) butter, divided 1/3 c flour 3 c milk 12 oz cheddar cheese 1 tsp salt 1/4 tsp pepper 4 Tbsp Panko-style bread crumbs Directions 1. Cook macaroni noodles and drain. 2. Preheat oven to 375 degrees. 3. In a saucepan, melt 1 stick butter over medium heat. Stir in flour. Slowly add milk, stirring. Bring to a boil and stir for 2 minutes. 4. Turn off the burner and add the cheese, salt, and pepper, stirring until the cheese is melted. Add the elbow macaroni noodles and mix well. 5. Turn into a 2 quart casserole dish. 6. Mix 2 TB melted butter, 4 TB bread crumbs, and a dash of pepper. Sprinkle over the mac 'n cheese. 7. Bake for 30 minutes. 8. I actually turned on the broiler for the last minute or so just to crisp up the breadcrumbs. If you do this, keep a close watch so it doesn’t burn. Source: LivingWellMom.com
