1 kielbasa sliced
1 med onion coarsely chopped
1 can corn
1 can black beans
1 can diced tomatoes
1 1/2 cups uncooked rice
3 glasses water

put everything in a crock pot and simmer on low for 4 hrs

i add celery salt and pepper to season

That sounds good, Mary. I'll probably try it when DH gets back from the trip he has planned for next week, although I may just try it on Thursday before he leaves, as it sounds so good.

Well, Mary, I made it today and it turned out well, except that DH picked the pieces of kielbasa out of his!! LOL. I don't know if it was the kind I used that he didn't like, but he does occasionally decide he doesn't like something.

No problem, I enjoyed it, and he had plenty of protein for lunch anyway, plus we had a nice salad as well as the rice dish. I've put away some in the freezer for myself as he is going away on business for 10 days tomorrow (I hate cooking, especially just for me) I've also put away some of the rice mixture with the sausage taken out (put into my portions), and this will be good for sides with pork chops for example.

I really like this recipe, as I have never tried rice in the crock pot before, and I may try it with a different meat and experiment with different seasonings. I love one pot meals that cook themselves! : D
