Sweet & Sour Pickles

Here's one of my favorite super easy recipes. If you can cut something, you can make these!


Sweet & Sour Pickles

3 cucumbers -- sliced
2 tablespoons salt
1 to 2 cloves garlic -- minced
2 cups sugar
1/2 teaspoon white pepper
1 onion -- sliced
2 cup white vinegar

Salt cucumbers and let stand for 3 hours (or overnight).

Mix remaining ingredients well (add onions last) and then combine all. Will be ready in a few days. I use 32 oz mayonnaise jars to store them. No need to "can" them, they will keep well for a couple of months.

Just what I needed. I harvested the last of the cucumbers from my garden before we moved. The vines produced a lot and I haven't had time to can pickles. Thanks, will make these tonight.

Be sure to add the salt/cucumber liquid to the sugar/vinegar mixture when you jar the pickles.
