tue l/n snack was chips and yoghurt

chef salad

i did some cooking today. chopped up all the fresh produce except the tomatoes. i chopped the brocolli stems into tiny pieces to make 'mary's potatoes'. i'm just waiting for the bacon to thaw.

completed a chef salad, flavored rice (instead od noodles to go w my pork chops i made/froze sat) and a kielbasa recipe

Dinner tonight: rice, Polish sausage (sliced and sauted with onions and chili pepper flakes), leftover stir-fried vegetables.

Will take leftovers from tonight's dinner for tomorrow's lunch.

Mary, color me jealous....sleeping through Friday! I wish! Hoping you are all right.

Have not done tons of shopping except for mainly fresh veggies & cheese. Spent a total of just under $25 for multi colored peppers, vidalia onions, romaine, pumpernickel bread, red onions, radishes, celery, carrots, and that also includes a rotissierie chicken from Costco for Friday night. With SO's son and company for the weekend, he buys the extra "fun" foods while they are here, and that included burgers from the big chain today for lunch and wings for dinner last night.

I had chicken Fri nite and as a snack after work on Saturday and the boys shared it for lunch with me.

We are invited to a cookout/birthday party after the race today so I just finished making a pasta salad. base of lite italian dressing with tri color pasta, tri color peppers, red and vidalia onions, celery, carrots, radishes, greek olives, feta cheese, parmesan cheese, leftover chicken(about a half of one), lots of dill, monterrey chicken seasoning, red pepper and garlic....came out great! Taking a big bowl over then will have lunch for both SO and I for the next 2 days and will send over a bowl to his folks as well.

Trying to work out of the pantry and freezer too.

It's going to be a mostly "from the freezer and pantry" week for me, too.

On Saturday, I took out a packet of ground beef and added celery (from the freezer), carrots, and potatoes to it - it can be eaten as is, with bread or rice, or used as a filling for pastries.

Yesterday, I went to a friend's chili cook-off and took a fruit salad I put together using whatever fruit I had on hand: honeydew, pineapple, grapes & strawberries.

For the week, I put a chicken to thaw - should be able to cook it today; will probably make a curry with it.

For vegetables for the week, I have green beans, Brussels sprouts, cucumber, and more carrots. Plus frozen peas (green peas and black-eyed peas) and corn.

All I really need to buy for the week are some fresh fruits and maybe some bread.

Edited to add:

Just came back from the grocery store. Bought red lentils ($1.19/lb), leeks ($1.19), onions ($.20/lb), bananas ($.33/lb), oranges ($.39/lb), papaya ($.99/lb), watermelon ($.49/lb), black grapes ($1.49/lb), peaches ($.99/lb), 2 bread rolls ($.50 @) and pita bread ($.75). Spent $15.43.

Grocery spending to date: $60.65 + $15.43 = $76.08

DD and I had pita bread with some of my previously made ground beef mixture as a filling, and an orange for brunch.

Planning to have chicken curry with rice and green beans for dinner.

Bless, it did turn out good. Matter of fact we were both so tired from outdoor projects that I took a bowl of salad over to our friends and made apologies (they live 1.5 miles from us). We ended up having the pasta salad as a lite dinner and then I had to go to work for a late meeting for the whole cres(total waste of time). BTW, I had some leftover diced ham for soup base and put a ziploc bag of that in the salad as well for just a bit extra.

We both took it for lunch today. Have made SO sandwich with onhand items for tomorrow with a side of pasta.The friends called back later and raved about it....

everyone on own tonite.....SO is taking son to a skeet shooting class and I have a training class tonite so we wil just dig from the fridge.....maybe I will have some more pasta salad!

Didn't get around to cooking the chicken curry tonight. So, had more pita bread and ground beef, plus grapes (and a slice of cheesecake for me!) DD is having a sore throat, so, make her some chicken broth - she's in the middle of her finals and can't get sick!

Maybe I will have a salad tonight when I get home from work. I did buy some fresh veggies this week at the store. Still trying to eat my pantry and freezer tho.

Tina, thanks. Seems to me, she always falls sick during finals week!
