I am making chive vinegar. I snipped the flowers off the chives, rinsed and ran them through the salad spinner. Placed them in a 1 1/2 qt jar and filled it with white vinegar. The vinegar is supposed to turn pinkish.
We will use this in our homemade salad dressings. I plan to put some in smaller jars and give to people at work that like homemade dressing.
