Kimberly: Sounds colorful and yummy!
Yesterday's lunch contained mostly vegetables: rice, with mango curry, cashew curry, fried eggplant, green beans, cooked leafy greens, cucumber salad, plus 1 small piece of fish.
Dinner: Spanish rice & 1/2 homemade burrito with shredded beef, beans, avocado, tomato salsa, & cilantro
Today's brunch was French toast and sausages, so not too many veggies! But dinner will be rice, fish, cabbage, eggplant, leeks, and cucumber.

Fresh Fruits for this week: bananas, honeydew melon, apples
Fresh Vegetables for the week: cucumber, spinach, green beans, carrots, lettuce
Just need to make it a point to incorporate them into meals. :p

I just got back from Costco where I bought 4 HUGE artichokes. Cannot wait to have them for dinner. Also got apples, lemons, tomatoes and avocados from the veggie/fruit aisle.
Actually made a small burger last night but with no bun and a large spinach salad on the side.

I haven't been here for some time, sorry my life got rather busy!
I have decided that I would join in here on this one.
March 1st, 2012 I started a food and exercise journal. In this journal I write down the following and use 4 different colour of pens.
here is a rough sample of how I do this.
6:30am wake up (all written in black) 7:30am - @home Fibre Plus cereal (1) - the time is written in green, words in black the one is written in red and means how hungry I was. 8:00am (written in pink) - walked to community centre 8:30am (written in pink) - arrived back at home 12:02pm @shop - salmon wrap, strawberries and grapes (2) 5:00pm @ home - chicken 1pc, rice and veggies (3) 11:00pm bed
Then at the bottome of the page I will write the following Weight - do not do this everyday weather - (sunny or rainy and the temp) water intake - 2 bottle 500ml
Wake up and Bed time is written in black as well as all the information. Eat time is green Exercise time is pink Food rating (1, 2, 3, 4, or 5) is written in red and circled.
I have also added since I started this a monthly calendar where I put a green or pink smiley or sad face. Pink in Happy face means I didn't eat any junk food or have alcohol. Green is a sad face which means I had junk food or alcohol.
All of this seems to be helping me and this week I am getting a threadmill and a eliptical machine.

I am continuing to try to incorporate more veggies:
Fresh veggies for this week: Green beans (a big hit - had to buy more!); cucumber, Brussels sprouts, tomato, spinach, carrots, lettuce
Fresh fruits: pineapple, bananas, green grapes, honeydew, cherries.
Yesterday, for example, I had tomato & lettuce with lunch, green beans and tomato with dinner, pineapple for fruit.

Eat healthy and balanced foods at least three times a day to maintain your health and fitness. Include all necessary vitamins, protein, calcium, fiber, carbohydrates in your diet to make it healthy and balanced.
