Thanks Liz, the carbs haven't changed. We mostly eat rice, wild rice, or quinoa. Sweet potatoes 1-2X every week or two. Potatoes maybe once a month and corn every couple of months.
I think I will try to cut back to 3X/week for myself on the beef and the meals that I do eat to be stirfry/beef barley soup etc.
I remembered what we had ~ it was Hawaiian Mecca and we had that not goulash for leftovers. We changed the menu up and had piggies in a blanket on Thurs night as Dh was at a mtg that provided a meal and then Fri night we had pork chops. Sat we made pizza for lunch and then our Legion members had a fish fry that evening which we enjoyed. Last night we had meatloaf.
That leads me to this week...
Mon: left over almond turkey, parsnips, salad Tues: pizza (DDs choice for her bday) Wed: something quick and easy Thurs: chicken stirfry Fri: steak/baked chicken Sat: roast
I went groc shopping at a store with a nice selection of produce so I have a lot of veggies/fruits to work with this week...

I bought groceries on Friday. I stayed within the limit, however I forgot the receipts at home, so I'll post later this afternoon.
Saturday we had cereal with fresh fruit for breakfast, lunch was tacos and grapes, dinner was icky clean out the freezer soup with pumpkin bread. We had cookies for dessert. Everyone was a trooper and ate the soup, even though it was not good.
Sunday we had cereal for breakfast. Lunch was scrambled eggs with bicuits and country sausage gravy and strawberry smoothies. Dinner was shrimp fettucini alfredo with a lettuce salad. For dessert the kids had cheese and bananas.

Well, WHEW, that was a big shopping trip. I'm stocked for the next six weeks, planning $10-$15 a week in fresh produce and milk. But all the bulk basics, meats, cheeses, etc are in the house, many bits awaiting processing... $420 was the total, but broken out into the six weeks, then adding $100 for incidental stuff in the next six weeks, that's still a good $100 under budget for the time period, and that's lovely. I've done up the meals by days, and have some bulk cooking sessions to do through this week, but then I'm mostly done for the rest of the six weeks, which isn't bad. We'll be trying a few new recipes (a chevre, basil, and sun-dried tomato-stuffed chicken breast, and a chicken/spinach quiche), and sticking with some tried-and-true favorites, like ham/cheese pockets, tamales, chicken pies, Scottish meat pies, pizza; we'll also have a birthday supper, several celebratory meals with the Easter holiday, and one evening of "heavy nibbles" with guests over. I'm SO glad that's done.

Woo Hoo EC! I'm so proud of you for getting that done.
I have a whole chicken out for roasting for tonights dinner. It's a puny little fellow, so it should be done rather fast. I remember when chickens were much bigger.
Last night we ate from the fridge. There was enough shrimp fettucini alfredo left for lunch, which DH took. DS ate biscuits and gravy, DH finished that off for his late night dinner. When DS came home he had a tortilla with cheese and grapes. DD had pumpkin bread with peanut butter, yogurt and a banana. I had a salad and pumpkin bread.
I made citrus bars using up two lemons and two oranges.
Tonight we're having the chicken. I'll be using up the parsley, onion, and orange to stuff the chicken for roasting. We'll have roasted potatoes and carrots for dinner, too. Tomorrow night I'll make a meatloaf with mashed potatoes, salad, and fresh strawberries. Thursday will be BBQ chicken sandwiches using up the rest of the chicken. We'll have oriental salad with that. Friday I'll make vegetable omelettes with bagels and cream cheese.

I should never go to the Asian grocery stores when they are having a clearance sale! Everything was 50% off (the store is closing ) and I stocked up!

Bless, I hope it wasn't your favorite store! Don't want them to close on you.
As far as the sale, I've gone through that and I always ended up buying more than I needed or would use. ugh. Just be sure to keep an eye on freshness and use it up and your purchases will have been wise.

YUM citrus bars!!!
I did the batch cooking with chicken pies today; made enough for four meals total, which is two more than I have planned, so that gave me one bag to set in the freezer for lunches through the month, and one bag to send home with a friend who did a favor for me. Nice!
Tomorrow I'll be batch-processing the beef (meat pies, shredded beef for beef/green chile tamales, hamburger patties, meatballs) and assembling some vegetarian lasagnas if I have time. Thursday we're doing up about ten dozen tamales for the freezer.
The batch cooking sessions take about two hours, but I get entrees for weeks and weeks.
We didn't take a co-op basket this Monday; I'll be doing well to use up all the produce from this just-past Saturday's basket by then. Speaking of, there's a grapefruit calling my name...
