What do you use for the pockets? Pita bread? Dough formed a certain way? (Maybe bought at the store?).

Simplicity, it's a quick dough, like a biscuit dough only a bit stretchier, with eggs and sour cream in it. It's rolled, cut into rounds, and then the filling goes in the middle... like savory turnovers. I've also done them with pastry crust (so, most store-bought pie crusts would work if a person doesn't care to make crust. I go through phases... sometimes, I'm just not able to make good pie crust!)

When I do the chicken/mashed potato/cream cheese/green onion pockets, I use pastry crust in small rounds (3"), and don't fold them; I just stretch another 3" circle over the top, so they make little UFO flying saucers. smile The cheeseburger/sandwich pockets are a half-circle size when finished; I think the starting circle is 6" across?

Yesterday was our busy day. When I was home for lunch, I put potatoes in the oven on time bake. I also defrosted some chili and put that in the crockpot. By the time the boys were home, they had a hot filling meal of chili topped potatoes. They added some cheese and sour cream to it as well. We always have a bowl of fruit out, so they added an orange to it.

The girls had that much later for their meal too.

Tonight we need a fast dinner as DS has a concert. We'll be having tacos (the meat, cheese, lettuce, sour cream and salsa are ready). I just need to prep some tomatoes. I have both hard and soft shells available too.

I've been craving taco salad for about two weeks. However, I can't justify it with the below freezing temperatures that we've been having. A hot meal satisfies so much better.

I often have taco salad when the rest of the family has nachos or tacos... I love the stuff! It's not much extra work to rip some lettuce for me, and toss all the toppings on top (I add black beans, since I'm a little hooked on those.)

We've had the occasional "picnic" to weather us through the winter.

Currently have some soup bones roasting in the oven. dh went "to town" yesterday and came home with some tomatillos and some serranoes so some green chili garbanzo stew is on the menu this week.

Beef barley soup for dinner tonight, something quick and easy tomorrow, stew, salmon and sloppy joes to round out the week.

Last night I made taco filling and people ate it differently based upon their desires.

Due to dental issues DS had a burrito. DD and DH had crunchy tacos and I poured it on a mixture of spinach and cabbage. I was out of lettuce. So I did indeed get my taco salad.

Tonight we're home, but I'm not sure what we'll be eating. I just might make chicken chili and rhubarb muffins.

Never did go grocery shopping last weekend. Haven't gone grocery shopping yet in Feb. The last shopping trip was on Sat., Jan. 29. I am going to see if I can hold out till this Sat. I finished the last of the bread this morning, but I have bread dough in the freezer, plus rice, noodles, potatoes, and, of course, flour. I still have a few oranges, pomegranates and a handful of blueberries, plus frozen peaches and canned fruit. And I have fresh vegetables (beets, carrots, parsnip, Brussels sprouts) plus frozen and canned veggies as well. I think I should plan to grocery shop once every 2 weeks and see how that works.
