Here's a good recipe to try if you have a source of zucchinis -
(It's also a sneaky way to get your kids to eat zucchini! \:D )

1/2 cup margarine, softened
1/2 cup vegetable oil
1 3/4 cup white sugar
3 eggs
1 tsp vanilla
1/2 cup sour milk (I make sour milk by adding vinegar to sweet milk - about 1 tbsp vinegar per cup of milk)
2 1/2 cups all purpose flour
4 tbsp cocoa
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
2 cups shredded zucchini or pulp (you can leave the skin on but there will be 'tell-tale' green spots in the cake)
1/4 cup chocolate chips

Cream together margarine, oil and sugar. Add eggs, vanilla and sour milk. Beat well with a mixer. Add dry ingredients. Stir in zucchini and chocolate chips.

Spoon into a well-greased 9 by 12 pan and bake in 350 degree oven for 45 to 60 min or until done.

I've been baking this recipe as cupcakes (bake for 25 to 30 mins) because it's more convenient for freezing and for eating when there's only 2 of us in the house.

You can't taste the zucchini at all - it simply makes the cake super moist! If you leave the skin on, the little green pieces leave evidence that it's a zucchini cake.

I suspect a person could add walnuts to this cake recipe and it would still work. I've never tried because I tend to not bake with nuts - my DD has a nut sensitivity.
