I like fish, especially fish that have a crisp outer skin. To make my fish crisp, I first dry the fish fillet with a paper towel before cooking. Then, I remove all liquid and fat from the pan while the fish is cooking. Removing the oils and fats will keep your fish crisp and delicious.
